Well, there's setting something in a different century and then there's modernising a story so that it's more relevant to current readers. Setting Xena in the 2300s would be an AU to me, but writing Snwo White and Rose Red set in 2010 would be a retelling.

Getting back to author intent makes it hard again, because 2 people can write similar things with different intent, but how does one tell unless they define it?

And then your canon example hits the same thing -- the author doesn't want it counted, yet if the original creator wrote it, isn't that canon by definition?
