I don't think Javert even gives a shit about the bread incident by the end--the breaking parole and robbing a child and that kind of stuff, yeah, but Valjean DID serve his time for the bread incident.

But I suspect Valjean would still value bread-qua-bread, as sustenance and as symbol, the way someone does who knows what it is to be short of it.
